On a keto diet, gingerbread may be difficult since it typically calls for molasses or brown sugar to achieve that deep taste, but we figured out how to obtain that deep flavor while keeping it extremely low carb. I can’t imagine that a moist, rich, spiced cake with cream cheese frosting wouldn’t be all your dreams coming true this season, but if this isn’t your choice of dessert we’ve got plenty more to choose from. To make the brown butter, melt the butter in a heavy-bottomed pot over medium-low heat.
When it’s all melted, stir it in with a spoon until it froths up. It should take approximately 5-7 minutes to complete this task. It’s essential to keep an eye on it at this stage while it browns, but don’t let it burn. Remove from heat after it has become a rich brown color.
Set aside to chill the butter after straining it into a small dish.
Preheat the oven to 350 degrees and grease an 8×4 loaf pan.
Make the cake as follows: Combine the coconut flour, erythritol, baking powder, ginger, cinnamon, and allspice in a medium mixing bowl. Using a whisk, combine the ingredients. Remove from the equation.
In a large mixing bowl, combine the maple extract, eggs, and browned butter after the butter has cooled for approximately 15 minutes. Combine all ingredients in a mixing bowl.
Combine the dry ingredients with the wet in two batches.
Bake the cake for 43 to 45 minutes in a greased loaf pan. Because ovens vary in temperature, test with a toothpick after 40 minutes!
Allow at least 20 minutes for the cake to cool before cutting it, and if you’re icing it, let it cool fully before applying the frosting!
To make the frosting, whip together the room temperature cream cheese and butter with a hand mixer until completely combined.
Cream together the salt, vanilla extract, and confectioner until smooth.
NOTE: On the gingerbread cake, we used 3/4 of the icing recipe, which is reflected in the recipe!
